Snow time! (Jude’s words) and Spiced Maple Cookies

Yesterday we woke up to snow falling and we went to sleep with snow falling and it never let up in between. It was a perfect day for sledding, playing in the snow, watching the snow from our window, trying out our new coffee machine, making maple spiced cookies (recipe follows) and decorating our gingerbread village.

These maple spiced cookies are a family favorite. I tweaked a molasses cookie recipe last year and turned them into maple spiced cookies. They reduce the Hansel and Gretel effect while we build our gingerbread houses =) 

Spontaneous bear hugs!

¾ Cup virgin coconut oil, melted

¾ cup packed brown sugar           

¼ cup real maple syrup                           

1 egg at room temperature                                  

2 tsp. baking soda                    

½ tsp ginger, heaping

½ tsp ground cloves, heaping

2 tsp cinnamon, heaping

¼ tsp nutmeg, heaping

½ tsp. salt

1 cup whole wheat flour

1 cup white flour

Mix melted coconut oil, sugar, molasses, and egg. Beat well.  Sift together flour, soda, cloves, ginger, cinnamon and nutmeg.  Then add to the wet mixture.  Mix well and chill for 30 minutes.  After chilled, form in 1 inch balls and roll in white sugar. Bake on parchment lined baking sheets in a 350 degree oven for 8 – 10 minutes.
